Quinoa and Veggie Salad   This colorful and nutritious salad is packed with protein and fresh vegetables, making it a perfect light meal for hot summer days.   Ingredients: - 1 cup quinoa - 2 cups water - 1 cucumber, diced - 1 bell pepper, diced - 1 cup cherry tomatoes, halved - 1/4 red onion, finely chopped - 1/4 cup fresh parsley, chopped - 1/4 cup fresh mint, chopped - 1/4 cup feta cheese, crumbled (optional) - 3 tbsp olive oil - 2 tbsp lemon juice - Salt and pepper to taste   Instructions: 1. Rinse the quinoa under cold water. In a small pot, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed. Let it cool. 2. In a large bowl, combine the cooked quinoa, cucumber, bell pepper, cherry tomatoes, red onion, parsley, and mint. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss to coat. 4. Sprinkle with feta cheese if desired. Serve chilled.    2. Zucchini Noodles with Pesto   Zucchini noodles, or "zoodles," are a healthy, low-carb alternative to pasta and are perfect for quick summer meals.   Ingredients: - 2 large zucchinis - 1 cup fresh basil leaves - 1/4 cup pine nuts (or walnuts) - 1/4 cup Parmesan cheese, grated - 2 garlic cloves - 1/2 cup olive oil - Salt and pepper to taste   Instructions: 1. Use a spiralizer or a vegetable peeler to create zucchini noodles. 2. In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, and garlic. Pulse until finely chopped. 3. With the processor running, slowly add the olive oil until the mixture is smooth. Season with salt and pepper. 4. Toss the zucchini noodles with the pesto sauce until well coated. Serve immediately.    3. Grilled Chicken and Avocado Wraps   These wraps are light, flavorful, and perfect for a quick summer lunch or dinner.   Ingredients: - 2 boneless, skinless chicken breasts - 1 tbsp olive oil - 1 tsp paprika - 1/2 tsp garlic powder - Salt and pepper to taste - 2 avocados, sliced - 1 cup mixed greens - 1/2 red onion, thinly sliced - 4 whole wheat tortillas - 1/4 cup Greek yogurt - 2 tbsp lime juice   Instructions: 1. Preheat a grill or grill pan over medium-high heat. 2. Rub the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing. 3. In a small bowl, mix the Greek yogurt and lime juice. 4. To assemble the wraps, spread a spoonful of the yogurt mixture on each tortilla. Top with grilled chicken slices, avocado, mixed greens, and red onion. 5. Roll up the tortillas and serve.    4. Watermelon and Feta Salad   This refreshing salad combines sweet and savory flavors, making it a perfect summer side dish or light meal.   Ingredients: - 4 cups watermelon, cubed - 1/2 cup feta cheese, crumbled - 1/4 cup fresh mint leaves, chopped - 2 tbsp olive oil - 1 tbsp balsamic glaze (optional) - Salt and pepper to taste   Instructions: 1. In a large bowl, combine the watermelon cubes, feta cheese, and mint leaves. 2. Drizzle with olive oil and balsamic glaze, if using. Season with salt and pepper. 3. Toss gently to combine. Serve chilled.    5.
